In the spirit of St. Patrick’s DayπŸ€πŸ€ I present to you this festive veggie burger. I used black beans, quinoa and seasonings for the burger patties and they turned out delicious! I devoured these like a greedy monkeyπŸ™ˆπŸ”

This burger is layered with sliced pears, avocados and a fried egg, smeared with my homemade sriracha spicy mayonnaise. Total flavor explosion in your tastebudsπŸ‘…

The buns are also vegan and organic. I used Silver Hills Sprouted Ancient Grain Whole Grain Burger Buns. To make this 100% vegan, simply omit the egg and the spicy mayonnaise. Here’s a little video to make you hungrier 😜

I know, now narcissistic is this burger eh? Happy St. Patricks Day!πŸ€πŸ€πŸ€

Recipe: yields 8 patties, serves 4

4 organic Silver Hills Sprouted Ancient Grain Whole Grain Burger Buns
1 can organic black beans (strained and rinsed)
1.5 cups cooked organic quinoa
2 tbsp ground flaxseed
1 cup chopped green onions, red onions, red peppers and chives
2 small garlic cloves (chopped)
1 tsp chili pepper (diced)
1/4 cup brown rice flour (or omit and add 2 more tbsp of ground flaxseed)
2 tbsp Flavor God Everything Spicy seasoning (or seasonings of choice)
Organic EVOO (for frying)

Fried eggs for topping (optional)
1 organic ripe pear (sliced)
1/4 cup mayonnaise with 1 tsp of sriracha sauce (mixed in a small bowl)

Easy! Throw all ingredients for the burger patties plus seasonings in a large bowl and mix until well incorporated, then transfer batter into a food processor and pulse until a smooth batter forms. Pour batter back into the bowl.

Place a skillet over medium-high heat and add 1/2 a tsp of olive oil (use this measurement for each patty you fry). Use a 1/3 measuring scoop or an ice cream scoop and place scooped batter into the skillet. Fry both sides for about a minute and repeat this process until the batter is finished.

When ready, let the burger patties cool for 5 minutes. Spread sriracha mayo mixture on burger buns and top with burger patties, pear slices, veggies and fried eggs. Enjoy!
