CHAI APPLE BLUEBERRY BREAKFAST MUFFINS

Good morning guys! Chai is my favourite spice tea, especially in the fall, and what better way to enjoy it than adding it to your baking? Win win πŸ™‚ These muffins are perfect when you’re craving a healthy breakfast treat on the go.

These yield 12 muffins and the key ingredients are unsweetened apple sauce, organic blueberries, organic chai tea, and coconut palm sugar (about 1/3 cup). Have a great day guys!

Recipe: yields 12 muffins

Dry Ingredients:

1 3/4 cup brown rice flour (or quinoa flour)
1 tsp gluten/aluminum free baking soda
1 tsp gluten/aluminum free baking powder
2 Yogi chai tea bags (or homemade chai mix)
A dash of sea salt

Wet Ingredients:

1/2 cup unsweetened applesauce
1/4 cup virgin coconut oil
2 organic cage free eggs
1 tsp organic pure vanilla extract
1/3 cup organic coconut palm sugar

Add ins:

A handful of organic fresh blueberries

Preheat oven to 375Β°F and grease a muffin tray with coconut oil or non stick cooking spray.

Combine wet and dry ingredients in separate bowls, then combine both mixtures together. Add in blueberries and mix until well incorporated.

Place 1/4 scoop of the muffin batter in the muffin tray and place in the oven. Bake for 15 minutes.

Take muffins out of the oven when ready and let them cool on the counter for 5 minutes.

Enjoy when ready!
