PALEO BUTTERNUT SQUASH PILAFF WITH POACHED EGG

Craving a filling paleo breakfast with lots of flavor and a little bit of sweet heat? I know I was, so I had this yummy pilaff and it was a great start to my busy day 🙂 Happy Tuesday!

Recipe:

1 cup grated butternut squash
1 organic cage free egg (poached)
A dash of salt and pepper
1/4 tsp. garlic powder
1 chopped scallion
1 tbsp. chopped red onions
1 tbsp. red bell peppers
1 tsp. sriracha sauce
1 tbsp. organic extra virgin olive oil

Place a skillet over medium heat and and add olive oil.

Place grated squash with spices and chopped ingredients in the skillet and sauté for about 2-3 minutes.

When ready, place squash in a ramekin to form shape and transfer into a round plate. Top with poached egg and enjoy.
