I absolutely love falafel. I donโ€™t eat them often, but when I do, I always enjoy it! No pun intended, although I may pull off a Dos Equis commercial haha! These were light, crispy on the edges and chewy on the inside. These are also baked and oil free, which makes them a little healthier than the regular falafel but just as tasty!


Recipe: Makes 15 Bites

1 can organic garbanzo beans (sodium free)
1 cup organic parsley leaves (chopped)
ยผ cup red onions (chopped)
ยผ cup red bell peppers (chopped)
ยฝ a tsp. sea salt
2 tsp. cumin powder
ยฝ tsp. garlic powder
ยผ tsp. chili powder (or cayenne pepper)
ยฝ cup brown rice flour
1 tsp. gluten/aluminum free baking powder

Preheat oven to 350ยฐF.

Place all ingredients (except flour and baking powder) in a food processor and puree until smooth. Transfer pureed mixture into a bowl, then gently fold in flour and baking soda and mix until you get a slightly thick and moldable texture. Cover the bowl with plastic wrap and place the mixture in the refrigerator for 1 hour.

Take out the falafel mixture when ready and line a baking sheet with parchment paper. Using a cookie scoop, place falafel mixture on the baking sheet and flatten the top slightly with the scoop to give it a disk like shape. Repeat process for the remaining batter.

Place the baking sheet I the oven and bake falafel for 20 minutes, flipping sides half way through. A golden brown crust should form at this point.

When ready, take falafel out of the oven and let it cool for 5 minutes.

Serve falafel bites with pita bread, or if you want a healthier version, you can try my Paleo Cauliflower Wraps/Tacos.
