MOTHER’S DAY BREAKFAST: PEANUT BUTTER AND BANANA BUTTERSCOTCH WAFFLES WITH TOASTED PECANS

Our mother’s are very special to us, and frankly, Mother’s day for me is everyday, because everyday I wake up I am always thankful and grateful for having a mother who supports and loves me unconditionally and she’s the reason why I am here. So while you may be considering making these yummy waffles for your lovely mothers, also take the time to tell her how much she means to you and has genuinely impacted your life πŸ™‚ ❀ Have an amazing day guys!

Recipe: Serves 3

For Waffles:

1/2 cup almond flour
1 tbsp. coconut flour
2 organic cage free eggs
1/2 a large organic banana
1 tbsp. organic natural peanut butter (smooth or crunchy)
1 tbsp. raw honey
2 tbsp unsweetened almond milk
1/2 tsp gluten/aluminum free baking powder
A dash of sea salt
1 tsp. butterscotch extract
1/4 tsp cinnamon (optional)

Pecan Topping:

2 tbsp. raw pecans
1/2 a banana
1 tsp. GHEE (or grassfed butter or coconut oil)

Turn on your waffle iron and let it preheat.

Place all waffle ingredients in a food processor and purΓ©e until smooth, then pour batter into the waffle maker and follow your waffle settings.

Meanwhile to make the pecan topping, place a skillet over medium heat and add GHEE. When it melts, add bananas and pecans and let it sautΓ© for a few seconds (make sure the bananas don't get too sticky). Remove skillet from the stove and proceed to plate your waffles when they are ready.

Top with bananas and toasted pecans and pair with any fruit of choice.
