Hey guys! Sorry for uploading my breakfast late. Would you have red velvet waffles for breakfast? Yes please! I used heated fresh strawberry purรฉe instead of beets to get the red/or pinkish colour and the flavour came out really good. So you can definitely switch it up every now and then if you’d prefer, and raspberries might work too! I also used non fat plain greek yogurt sweetened with stevia for the creamy scoop, but before I proceed, I couldn’t resist sharing the conversation I had with my friend when she saw the picture:

Friend: Holy moly!

Me: hahaha you like?

Friend : it looks like it tastes the way angels should taste.

Me: uhmm, so pure?

Friend: like red velvet.

Me: lol! So all angels taste like red velvet?

Friend: In my heaven they should. Now I want to eat an angel.

I’m guessing that’s positive feedback, even though eating angels might be a strange craving lol but these were yummy! I think I had more fun making the chocolate garnishes. Have a great day guys!

Recipe for waffles (serves 3)

1 1/4 cup almond flour (or 1 cup brown rice flour, or oat flour-not paleo)
2 organic cage free eggs
2/3 cup fresh organic strawberries (heated and diced)
1/2 tsp gluten/aluminum free baking soda
2-3 tbsp unsweetened almond milk
1 tsp organic coconut palm sugar
1/4 tsp organic pure vanilla extract
1/4 tsp cinnamon
A dash of sea salt

Pre-heat waffle maker.

Place strawberries in a bowl and heat up in the microwave for 5 minutes.

Combine strawberries with remaining waffle ingredients in a bowl and mix until a smooth batter forms.

Pour batter into the waffle iron and let it cook until ready.

Take out waffles and set aside. To make glaze, mix all glaze ingredients together and warm it up in the microwave for 30 seconds.

Top with semi frozen greek yogurt or any topping of choice and enjoy!

    Yum, these sound delicious! I love the fact that they’re paleo too! And who doesn’t love red velvet/strawberry waffles? Yum!

        They sure can ๐Ÿ™‚ if you would like to make a single serving, you can use 1/4 cup almond flour instead of the original serving and 1/4 cup strawberries.
