PALEO STRAWBERRY LEMON MUFFINS

Happy Friday everyone! I say muffins can be a yummy and fun way to start the day don’t you agree? πŸ˜‰

These were light, fluffy, and very easy to make, and also yummy of course πŸ˜‰ The combination of the strawberry and the lemon is just another way to experiment with flavour, and I promise the experiment was quite successful. Have a great weekend everyone!

Recipe: yields 12

2 cups almond flour
1/2 tsp gluten/aluminum free baking soda
1/8 tsp sea salt
2 organic cage free eggs
1/4 cup organic raw honey
2 tbsp. organic virgin coconut oil
1 tbsp. lemon juice (from lemon)
1 tsp organic pure vanilla extract
1 cup organic strawberries (diced)

Preheat oven to 350 degrees F.

Place all ingredients (except strawberries) in a food processor and blend until smooth.

Transfer into a bowl and add in diced strawberries.

Scoop batter using an ice cream scoop into a muffin sheet lined with cupcake/muffin liners. Bake for 20-25 minutes or until it passes the toothpick test.

Let it cool when ready and devour!
