PALEO GARLIC CHILI TUNA BURGERS ON EGG BREAD BUNS

Happy Monday guys! Now that the weekend is over, I figured I’d start my week with something that I would typically look forward to on the weekends, but then again if you’re a burger lover, I figure everyday is a good day for a yummy and hearty burger ๐Ÿ˜‰ So if you’re looking for a guilt free burger that is low carb, high in protein and contains healthy fats, then I believe this burger is worth trying. You can also use lean ground beef or minced chicken breast to make the patties if you’d prefer, but this recipe is a pescatarian version since all my recipes are indeed pescatarian! So feel free to make what suits your taste buds ๐Ÿ™‚ Cheers!

Recipe for Buns (Makes 6 Mini Buns):

3 organic cage free eggs (separated)
1 tbsp. coconut flour
1/2 cup almond flour
1/4 tsp. sea salt
2 tsp. lemon juice (from lemon)
2 tbsp. organic unsweetened almond milk
1 tsp. organic pure maple syrup
1/2 tsp. gluten/aluminum free baking soda
2 tbsp. organic virgin coconut oil

Recipe for Burgers:

1 can organic albacore tuna (sodium free)
2 tbsp. flaxseed meal
1/2 an organic avocado (mashed)
1 small minced garlic clove or 1/2 a tsp. garlic powder
1 tbsp. diced red onions
1/4 tsp. sea salt
1 tsp. chili powder

To make buns, preheat oven to 300 degrees F.

Mix egg whites with lemon juice and whip until fluffy, then add to dry ingredients and mix together. Add egg yolks with wet ingredients in a separate bowl and mix until smooth.

Combine both mixtures together and mix until well incorporated.

Line a baking sheet with parchment paper and scoop portions of the batter onto the baking sheet using a cookie scoop. Flatten out into 1 inch round disks.

Place in the oven and bake for 12-18 minutes or until it passes the toothpick test.

To make patties, mash tuna and avocado in a large bowl, then add remaining ingredients and mix until well incorporated.
Heat a skillet over medium heat with 1/2 tsp coconut oil and form mini tuna patties. Fry each side for about 20 seconds and let it cool for 2 minutes before serving.

Stack your burger with your toppings of choice and enjoy!
