VEGAN BLACK BEAN AND QUINOA TOMATO SALAD BOWLS

It’s Friday! Here’s a quick and easy vegan recipe you can put together if one of two things happen:

*You’re hungry, angry, and in a hurry = “Hanguhurry”

*You are out of groceries (I still haven’t shopped yet! bahh!!)

Result: This fresh and yummy vegan deliciousness. But then again, you have to be a real fan of tomatoes to appreciate this recipe! if you’re not a fan of tomatoes, you can substitute them with bell peppers, and if you’re not a fan of those either, starve!! Haha kidding, you can enjoy the quinoa and black bean mix on its own, and show it some Sriracha love for extra flavor ๐Ÿ™‚

Recipe: Serves 2

2 organic whole tomatoes (cored)
1 cup whole grain quinoa (cooked and seasoned)
1 cup organic plain black beans (from can)
1 tbsp. sodium free coconut aminos
salt and pepper to taste (optional)

Very simple actually, stuff tomato bowls with remaining ingredients and eat. Ditto!

    This sounds wonderful! It is a great twist on the traditional stuffed peppers (and peppers bother my tummy), I can’t wait to give this a try! Have you ever baked them as well?

      Thanks doll! I have baked them, and they come out extra juicy so it feels like comfort food on a really cold night ๐Ÿ™‚ most times I bake the tomatoes with an egg, and it comes out just as good ๐Ÿ™‚
