What makes these cookies so special? Well, for starters they tasted absolutely divine, and of course, they are flour free! I substituted the flour for organic chickpeas! Yup, and the cookies do not taste beanie, because quite frankly canned chickpeas are quite bland in flavour when they are purchased without any added ingredients or preservatives. Your best option is to buy organic canned chickpeas 🙂 This recipe is definitely a must try!

Recipe: makes 12 cookies

1 can of organic chickpeas (rinsed and patted dry)
2 tbsp organic pure vanilla extract
1 tsp ground cinnamon
1/3 cup organic peanut butter (or nut butter of choice
1/4 cup organic pure maple syrup
1 tsp arrowroot starch
1/2 a cup vegan chocolate chips (Enjoy Life brand)

Preheat oven to 350°F.

Combine all ingredients, except chocolate chips, in a food processor and process until very smooth. Stir in chocolate chips and combine.

Line a baking sheet with parchment paper, and using a cookie scoop, place the cookie balls on the baking sheet.

Bake for 12 to 15 minutes and let them cool on the pan for about five minutes when ready.

    My friend (who’s coeliac) made a choc chic spread with chickpeas before, so i have to show her these, she’ll be really excited!
