Happy Friday guys! It’s my last day at the office and I’m super excited! To celebrate, I made these sexy chocolate cups because….well, I was in the mood πŸ˜‰

These chocolate cups are homemade using semi sweet dark chocolate! I used these silicone muffin cups I found at William Sonoma, but you can also purchase them online as well. Have a great and safe weekend everyone! And if you’re getting the snow storm this weekend, be extra careful.

Recipe: Makes 7 cups

1/2 cup semi sweet chocolate chips/chunks (I used Enjoy life)
1/2 tsp organic coconut oil
1 organic banana (ripe)
1/3 cup organic fresh raspberries
1/4 tsp organic pure vanilla extract

Place chocolate chips and coconut oil in a bowl and melt in the microwave for 1 minute. The coconut oil helps with loosening the chocolate and making it smooth, since it’s dairy free.

When ready, pour about 1.5 tbsp of melted chocolate into the silicone cups. Use a cooking brush or a fork to cover the edges of the cup with the chocolate. Make sure it’s about 1 inch thick or the cups might break when you’re trying to take them out.

Place cups in the freezer, they should form a hard shell in 10-15 minutes.

In the meantime, purΓ©e banana, raspberries, and vanilla in a food processor until smooth. You can also add 2 tbsp of coconut cream if you want it more whipped or creamy, and also a sweetener of choice if you prefer.

Fill chocolate cups with mousse purΓ©e and place back in the freezer for 5-10 minutes. It won’t freeze, but it will form a thick mousse texture when ready.
