SPICY CAULIFLOWER AND SHRIMP CHARD WRAPS

I struggled to make and eat this dinner tonight because I got struck with the stomach flu 😦 which means I have no appetite so it’s really hard to eat. But that doesn’t go without saying that these tasted amazing! I had to eat them really slowly so they could stay in. Yummy regardless!

Recipe:

1 cup cauliflower rice
3 large chard leaves
1 cup raw shrimp (peeled)
1/4 cup chopped red onion
3 tbsp spicy hummus spread (type in “hummus” in the search bar of the blog and you’ll find the recipe).
A dash of sea salt
A dash of black pepper and seasonings of choice

PurΓ©e cauliflower in food processor until rice texture forms and set aside.

Wither chard leaves in a saucepan with a dash of coconut oil over medium heat. Set aside when leaves are set.

Peel and sautΓ© the shrimp with onions and seasonings of choice until ready.

Make wraps and enjoy! You can also add other ingredients to the wrap if you prefer.
