PUMPKIN MANGO SPICED BREAD

Yay! The walking dead comes on in a couple of hours and I had to make this treat to celebrate. This recipe was simply amazing! Happy sunday!

Recipe:

1/2 cup organic almond flour
1/2 cup organic brown rice flour
1/3 cup diced ripe mangoes (not frozen)
1/2 cup organic canned pumpkin
1/4 tsp celtic sea salt
1/2 tsp gluten free/aluminum free baking soda
1 tbsp ground cinnamon
1/2 tsp nutmeg
1/2 tsp ground cloves
2 stevia sachets
3 organic cage free eggs

Preheat oven to 350 degrees F.

Mix wet and dry ingredients separately in a bowl before bringing them together (alternatively, you can puree batter in a food processor, but the flour would make it a powdery mess).

Pour batter into a medium sized bread pan and bake for 40 minutes or until it passes the toothpick test.

When ready, let bread cool for 20 minutes. Top with coconut cream and additional diced mangoes. Yum!
