OH MY! My first attempt at making vegan pancakes where almost a success, (screwed up the remaining pancakes lol). These are 100% vegan, gluten free, dairy free, soy free, egg free, and sugar free!

1/4 cup gluten free organic oat flour
1 scoop gardens life organic raw chocolate protein powder
1 tbsp flaxseed meal
1/4 tsp cinnamon
1/4 tsp gluten/aluminum free baking soda
1/2 tsp gluten/aluminum free baking powder
1/2 stevia sachet
1 small banana (mashed)
2 tbsp orange juice (squeezed from orange)
1/4 cup unsweetened coconut shreds
1 tbsp organic natural peanut butter
1/4 cup organic unsweetened almond milk

Place ingredients in a food processor and mix until smooth. Scoop batter portions into skillet over medium heat.

Note: to make coconut cream, scoop the top of the coconut milk from the can and make sure the moisture from the surface doesn’t seep to the top or it will ruin the thickness of the cream (I learned that the hard way 3 cans later). Mix gently with 1 tbsp raw cacao powder and stevia and place in the freezer for about 5-7 minutes (it freezes quickly so be careful, but if you are using full fat, then you can freeze for 2-4 minutes because it thickens up quicker). When thick texture forms, spread on pancakes and consume quickly!
